no more smoke

After days and days and days of thick, yellow, lung-clogging smoke, we woke to clear blue skies and a chilly nip in the air. The wind blew steadily out of the west all yesterday and has somehow blown the smoke away. I’m not exactly sure how this has happened since we have a very large fire burning about 75 miles due west of us. No complaints, though. We have not had to evacuate. Nor have we had a hurricane come into our house. I have no complaints about our wonderful life.

Phil is growing in spurts, just like my own boys. It seems he becomes a bit portly then overnight grows into his tummy and becomes all legs. He is already 4 months old and I don’t see him nursing very often. Maggie nursed until she was 8 or 9 months old, big baby. I guess each calf is different like each child is different.

The pigs are really starting to pack the weight on now. They were too small for the fair this year~ first time that has ever happened. Most of our 4H piglets are born between late January and mid February. These guys were born on March 17th~ an entire month later than usual. Plus it was a very warm summer. The piglets didn’t seem to eat as well in the heat though we tried to feed them in the coolest parts of the day. The boys were disappointed they didn’t make weight. I’m a little bit happy. I like having pigs around. They help with the garden clean up. And the garden isn’t cleaned up yet!

Our peppers are wonderful this year. So I made a big batch of Cowboy Candy. My favorite recipe comes from Jackie Clay.

3 lbs. jalapeño peppers (I use whatever peppers I have on hand)
6 cups sugar
2 cups white vinegar
½ tsp. turmeric (I skipped both the turmeric and celery seed this time only because I have neither in my pantry. The batch turned out great despite the omission)
½ tsp. celery seed
3 tsp. granulated garlic

Slice jalapeños. If you don’t want so much heat, cut off top and cut out seeds and ribs before slicing ¼ inch thick. If you are sensitive or can’t keep from wiping your eyes (burns like crazy if you do!), wear plastic gloves.

Add all ingredients but peppers into a large pot. Bring to a boil, stirring frequently, and simmer for 5 minutes. Add peppers. Bring to a boil and simmer 4 minutes. With a slotted spoon, remove peppers and pack into half-pint jars. Bring syrup to a boil and boil hard for 6 minutes. This thickens the syrup somewhat. Ladle over sliced peppers, leaving ¼ inch of headspace. Wipe rim of jar, add previously simmered lid, and screw down ring firmly tight. Process in a boiling water bath canner for 10 minutes. (Or just place in the ‘fridge, like I did :)).DSC00404

YUM! All these jars will be gone by Christmas!

The days are definitely getting shorter and chillier. I had to wear a sweatshirt during chores this morning. We haven’t had a frost yet, which is amazing, but I think that might change by the end of this week. I would be really happy if it rained- not so much if it froze. I still have more beans to harvest and more squash. Of course the cruciferous’ (what is the plural of “cruciferous”? Cruciferi? ) wouldn’t be affected by a light frost.

I’m off for the garden! More soon (tomorrow maybe?)  :]

Today’s count: 23 eggs

What’s for supper: Fried chicken, green beans and mashed potatoes.

Weather: Areas of smoke. Sunny, with a high near 83. Calm wind becoming south 5 to 8 mph in the afternoon. Tonight areas of smoke. Clear, with a low around 41. South wind 5 to 8 mph becoming calm after midnight.

    1. You can make the Cowboy Candy with hot or sweet peppers but the hot is better. The boys LOVE that stuff! And it goes fast. I forgot to add my book at the end of the blog post. I’ll add it next time. How are you doing? How’s school? Love you too!
